You would be forgiven for thinking I'd fallen off the planet. I really haven't - I've been working on lots of things, but unfortunately cant show you all of them. Well, maybe just a sneak peak! Here's the evidence!

Oh, and I manged to fit in a wee bit of baking. I thought you might like the recipe too.
Cream the butter and sugar. Add the egg and vanilla and mix well. Combine the dry ingredients and add to the mixture. Mix well. If the mixture is to dry and crumbly at this point, gradually add 3-4 tablespoons of water. Roll large teaspoonfuls of the mixture, and place on a baking paper lined oven tray. Flatten the ball a little. Bake at 180c (170c fan forced) for 10- 15 minutes. Place on a wire rack to cool. Ice with chocolate icing, and dip in coconut. Store in an air-tight container. Makes 40
- 2 cup sifted icing sugar
- 3 tablespoons cocoa
- 2 tablespoon butter
- 1-2 tablespoons of hot water
Mix all of the icing ingredients together in a bowl until a thick paste is formed.
